Marshmallow production lines are widely used in the marshmallow manufacturing industry. They work by mixing ingredients such as sugar, water, syrup, and edible gelatin into a solution in fixed proportions, then aerating and whipping the mixture until it becomes a light, elastic solid.
A marshmallow line consists of a cooking system and a forming system. The cooking system handles the preliminary processing of materials. It usually includes a sugar cooker, a mixing tank, and a storage tank.
1. The sugar cooker is the main heating device, used mainly for cooking sugar and syrup. Its heating method can be customized to electric heating or steam heating based on the customer’s energy supply.
2. The mixing tank is used to blend edible gelatin into the cooked solution.
3. The storage tank holds the prepared mixture before it goes to the whipping process.
4. The forming system is divided into mold forming and starch forming, depending on the marshmallow manufacturing process.
4.1 Mold forming is the whipped and colored marshmallow mass deposited in fixed quantities into customer-specified molds.
4.2 Starch forming is when the soft marshmallow is extruded through a depositing nozzle onto a starch bed, then covered with a top layer of starch to set.
4.3 The forming system includes an aerating and whipping machine, a coloring system, and a depositor or depositing head.
5. The aerating and whipping machine is the most important part. It evenly mixes air into the syrup solution, making the final product light, fluffy, soft, and elastic while forming a stable porous structure.
5.1 The coloring system uses static mixing to evenly blend the desired color into the whipped marshmallow.
5.2 The depositor usually adopts quantitative dosing, driven by a servo or pneumatic system.
5.3 The dispensing head is normally a mechanical device with a twisting function, which distributes different colored materials through separate channels.
Ensure the installation area has sufficient length, width, and height for the machine. Also make sure enough working space is left for operators after the machine is placed.
Install one power distribution box every 5 meters near the equipment for electrical supply. Set up drainage outlets in areas with valves and discharge openings for waste and cleaning water discharge. Install air supply connections every 3–5 meters for connecting compressed air to the pneumatic components. Install a water supply connection near the material cooking area for ingredient preparation and equipment cleaning.
First confirm whether the forming system uses mold forming or starch forming:
Mold-forming machines are smaller and more mobile. If mold forming is used, installation can start either from the cooking system to the forming system or vice versa. For starch-forming systems, installation must start from the forming system. A starch-forming system usually includes an aeration and whipping unit, color mixer, depositor, conveyor, powder spreader, vibrating sieve, and starch recovery unit. Among them, the depositor, conveyor, and powder spreader are integrated, and the conveyor is usually long (over 15 meters). Therefore, install in this order: Assemble and install the conveyor sections, position the depositor, position the color mixer, and position the whipping unit. Once the whipping unit is positioned, you can locate the vessels for the material cooking system.
The marshmallow production line includes many pipelines, such as product pipelines for material transfer and utility pipelines for heating or cooling media.
Product pipelines: Material must flow smoothly from inlet to outlet without blockage. All pipe connections must be securely locked with clamps, and no sealing rings can be missing. Heating/cooling pipelines: Must form a complete closed loop from start to end, with smooth flow, no blockage, and no leakage.
Wiring includes power cables and communication cables. Power cables supply electricity to electrical equipment. Terminals must be firmly connected, not loose or easily oxidized. Power cables should run through cable trays or conduits to avoid physical damage. Communication cables are more delicate and must be protected by conduits. They should be laid away from main power cables to avoid electrical interference.
After full installation, do NOT start production with materials immediately.
First test all pipelines with water to check for leaks. Repair any leaks immediately.
Check material transfer between units. If flow is abnormal or blocked, inspect pumps and valves. Once all issues are resolved, run tests with actual materials.
Cooking stage: Record the amount of materials, feeding order, processing temperature, and time.
Whipping stage: This is critical. Use the variable control method to take multiple batches of samples. Record weight and density. When samples are consistent, save these values as machine parameters. Color mixing stage: Ensure color is evenly distributed, with no streaks, uneven shades, or color cross-contamination. Depositing stage: Works together with whipping. If the product cannot form properly, adjust whipping parameters first (especially temperature), then adjust mechanical settings: speed, channel width, and stroke of servo or pneumatic systems until requirements are met.
1. Make sure all mechanical connections are properly leveled and vertical and remain tight during operation.
2. The power supply for the machine must be stable. Voltage fluctuations must stay within the allowable range. If voltage fluctuates often, a voltage stabilizer is required.
3. Clean the machine with hot water right after use to avoid material buildup that could corrode the equipment or affect the quality of the next batch.
4. Perform maintenance on key components every 3 to 5 operating cycles, including motors, gear reducers, bearings, and other similar parts.
